When your sideways, you scrub off speed, so the less sideways the better, but only to the extent of not loosing pace in the turn. On dirt, the idea is balancing what angle is necessary to carry the most speed, while keeping the car as straight as possible. An asphalt LM for example, is generally tight in unless under braking, and loose off, which is a strong part of your lap times. Well, to me it's very different, but also very similar.
